Split Pea Soup recipe

It's still rainy and chilly here in Wahiawa and I'm having a difficult time staying warm. This soup is both comforting and warming. We're having it for dinner tonight. Yum!

Split Pea Soup

2 cups chicken broth
2 cups water
1 cup dry split peas, rinsed and drained
1 1/2 cups chopped ham (or 1 1 /2 lb. meaty ham bone or ham hocks)
1 teaspoon dried marjoram, crushed
1 bay leaf
dash pepper
1 teaspoon Liquid Smoke
1/2 cup chopped carrot (1 medium)
1/2 cup chopped celery (1 stalk)
1/2 cup chopped onion (1 medium)
1/2 cup chopped potato (1 small)
Salt to taste

In a large saucepan combine broth, water, split peas, chopped ham, marjoram, bay leaf, pepper and Liquid Smoke. Bring to boiling and reduce heat. Cover and simmer 1 hour, stirring occasionally. (If using ham bone or ham hocks, remove meat and cut off bones when cool enough to handle. Coarsely chop meat and return to saucepan.) Stir in carrot, celery, onion, and potato. Return to boiling and reduce heat. Cover and simmer for 20 - 30 minutes more or until vegetables are tender. Discard bay leaf. Add salt to taste.

Makes 4 main dish servings
